Very well written. I have no idea about the cooking. Here in Arkansas we fry our fish. Some transplants might bake, but they know not to invite us over.

Be sure to pat the fillets dry before seasoning. This will ensure crispy skin and the sought-after golden sear on the flesh side. (Thank you for this tip. I'll try it.)

my wife and I used to play "Food Channel" games and each of us would make an appetizer, entree, or desert. When my daughter visited me, she watched that channel often and got me interested again. Too bad I have no oven! Pistachios were in the mix a lot yesterday.

Every cookbook on the face of the earth should be written like this... What an incredible adventure drawing in the ones who claim not to like salmon but have fallen deeply in love with those twelve paws and wagging tails or the offer of a fabulous cocktail while listening and jamming to awesome music. When we reach the salmon preparation, our spirits are floating so high that we just breathe all the aroma in and learn how to prepare a salmon or two.
