This was unexpected! I have not read an epitaph in this contest for an animal. That sets your entry apart and in a different creative corner. Nice!
I liked that you offered some rhyming here - but the following line sounded a bit 'off' to my ear because there was no end rhyme to match it.
Perhaps consider:
He had flapping ears that flipped around
--> He had flapping ears that flipped (and turned)
--> for a near rhyme/ slant-rhyme
